Mahi Mahi Pineapple Skewers with Tomatillo Salsa
12 ounces mahi mahi fillets (thawed if frozen), cut into 1-inch chunks
1 cup fresh pineapple chunks
1 green (or red) bell pepper, cut into chunks
1/2 teaspoon salt
Freshly ground black pepper
8 corn tortillas
1 cup tomatillo salsa, divided
Soak skewers in water 30 minutes if using wood or bamboo skewers. Heat oiled grill over high heat. Alternate fish, pineapple and peppers on the soaked skewers. Sprinkle with salt and pepper. Place skewers on hot grill. Cook 3 to 5 minutes, turning once. Remove from heat. Wrap a stack of tortillas in foil; place them on a grill to warm. Transfer skewers to plates. Use tortillas to pull fish, pineapple and peppers from skewers as you eat, drizzling each bite with salsa. Makes 4 servings.
